Also known as Hawaiian sweet potatoes, these purple jewels are zeeee best. Like other sweet potatoes, they have high nutritional value. Their rich purple color comes from the antioxidant anthocyanin, which:
- helps prevent cardiovascular disease
- improves visual functions and memory
- fights against stomach, colon, lung, and breast cancer cell growth
What amazes me the most about them is that purple sweet potatoes have 3X the amount of antioxidants as blueberries!!
Hope you have a greater appreciation for them now heh. One thing that bothers me is when people mix them up with taro because the two are completely different! I could also bring in ube (purple yam) to make it even more confusing, but that will bring up a whole new discussion. Do you think you know the difference between the three?
